This recipe has its origins in the north of Spain and the south of France. It is a delicious combination of cod, milk and Extra Virgin Olive Oil.

It is ideal eaten with toast, in vol-au-vents and as a base for many appetizers.

It can be served as a stuffing for red peppers or eggs, decorated with cayenne pepper, capers or olives.
